Founded by Sotral SpA and SerLog cooperative, serve mainly as a platform for meetings and collaboration among the industrial, academic, organizational, social worlds, territorial communities, etc.

Risteco bases its action on two main concepts:

  • Innovation and research; 
  • "Life Cycle Thinking" life cycle analysis (LCA), it allow to develop the LCA approach to study the eco-efficiency of catering, from the production of raw materials up to the waste (end of life) through logistics.

Risteco conducts research, communication and environmental education through cientific-technical publications (Risteco Papers), and plays an active role in the creation of an international network for the promotion of sustainable catering.

Risteco is a member of AlimenTerra since January 2008. Together, organized the workshop WT 35 on systems and sustainable agro-food sectors, on the occasion of the second China-Europe Forum organized by the Charles Leopold Mayer Foundation for the Human Progress (October 2007).

Risteco works particularly with Slow Food in projects to study the sustainable catering in hospitals and universities. Participates in the preparation "Terra Madre 2008" and "2008 Hall of taste" (project for the catering and foodstuffs logistics ).

Risteco projected good practices for sustainable catering (three-differential of waste and recovery of waste plastics, environmentally friendly vehicles, environmental education for children and families), today in many Italian cities (Turin, Genes, Florence, several small towns in the Piedmont and Ligure, Tuscany, Emilia-Romagna).

March 27, 2008, Risteco organize a conference under the project "School Fruit Scheme" of DG Agriculture of the European Commission.
